If I hav nginx setup as a reverse proxy does adding mod_memcache and other cache options to apache help increase speed?

Why don't you run benchmarks in both configurations and see for yourself?

Memcache will help reducing your MySQLd's load, if your website's script supports memcache (there are moduls for WordPress and else), and therefore increase your website's speed. Setting up Varnish infront of your Apache would help more though and also eAccelerator for PHP.

Why not serve through nginX and use Varnish/Squid in front of it?

Different rewrite rules, possible incompatibility with a hosting panel OP uses and therefore the need of setting up vHosts manually. For a shell managed server, it would be a good alternative though.
